The hind leg of a Lamb, with the aitch bone removed for easier carving, and a french trimmed knuckle. A classic Sunday roast joint, it can be roasted in a hot oven relatively quickly and served pink (with sauces such as mint jelly, redcurrant jelly) or it can be very slowly “pot” roasted falling off the bone.
