We remove the bones and trim pork bellies. They are then dry cured with salt, along with dark sugar, bay, nutmeg & thyme. The cured pork is then rinsed & tied into rolls and hung up to dry further. It is sliced and can be used as an ingredient or simply fried and enjoyed.
