The hind leg of a Lamb, with the chump or rump left on, the chump & aitch bones are removed and the knuckle is french trimmed. The boneless rump adds a further 2 or 3 servings, making this an ideal joint for a large party or celebration. With the aitch bone removed, carving is made easier.
