Large cubes of boneless Lamb leg (approx 5cm square) are prepared and tied. The cut takes its name from a Daubiere, the pot used for long slow cooking. The pot’s shape helps retain moisture whilst the meat cooks. Lamb Daubes are made with white wine and vegetables.
The diced meat is approx. 5cm and roughly 500g. Sold in packs of 4 cubes.
