The front leg of a lamb, square cut and cut in half. The  knuckle side of the shoulder has the knuckle french trimmed. This joint is for classic slow roasted lamb – the famous french dish cooked “Boulangere”, potatoes, vegetables and the meat all cooked slowly together.
