The front leg of a lamb, square cut and cut in half. The  blade side of the shoulder has the blade bone through the middle with the neck fillet left on. This joint is for classic slow roasted lamb – the famous french dish cooked “Boulangere”, potatoes, vegetables and the meat all cooked slowly together.
