Our geese are reared locally, outdoors on grass. They are free range and develop fabulous golden fat. Their taste and texture is incredible.
Goose was, of course, the traditional roast bird of the British Christmas. Turkey was an American import. In recent years Geese have once again been growing in popularity.
We pluck our Wessex Whites and hang them to mature. They are dressed to order. We suggest allowing 0.5kg – 0.75kg per person (bone in).
