Escallops

These steaks are prepared from the salmon cut (part of the silverside), all the fat and gristle is removed from the muscle, which is then cut in to thin steaks. The steak is then flattened to produce the escallop – they are very good minute steaks, ideal for making schnitzel or for beef olives.
