Beef daubes are approximately 5cm square cubes of either chuck or other stewing cuts, held in shape by bands. A daube is a slow cooked dish, taking its name from a Daubiere, this is a strange looking pot that has a concave lid, the daubes are cooked in wine with vegetables and herbs, the steam condenses on the lid & runs back into pot.
