Crepinette comes from the French word Crepine for Caul, the delicate membrane from a pig’s stomach that coats Faggots.
Crepinettes are like a sausage. Seasoned minced pork is mixed with fresh parsley & tarragon and a drop of white wine, then wrapped in caul. Pop in the oven for around 40 minutes and serve. A crepinette doesn’t have the density of a sausage as they are made in the hand. They are very popular !
Crepinettes do not contain crumb or rusk, but do contain preservative E221. We make our own seasoning mix.
