This one has been a long project ! A Boudin should be a Pork Souffle and little like Pate. Pork mince, fat, onion and fresh pig’s blood is seasoned and stuffed into a natural case, not plastic. We suggest heating in an oven and spreading on some toast as a tasty nibble.
