Sausages, Bacon & Charcuterie

This is where the Butcher becomes an artisan. This is our passion. Heavily influenced by Italian pork butchery & charcuterie, we use an array of spices, herbs and other ingredients to make little gems of flavour.

Watch this space. There are a number of projects we are working on to add greater depth to the range of offerings.

The products in this category are either for cooking, have been cooked (cotto) or are cured (crudo). We make everything except the Crudo. We will shortly add Prosciutto Crudo & Coppa and Salami made by a very small charcuterie business in the tiny mountain village of St. Rhémy En Bosses in the Valléd d’Aoste in Northern Italy.
