We are pleased to offer our customers the opportunity to come & spend time with us and get some hands on experience of butchery. We are passionate about food and cooking. If you understand how to butcher a carcass you will have learnt, where the different cuts come from, you will know the different textures of meat, the different qualities of cuts of meat and your understanding of how to use different pieces improves. Once you have a better knowledge you will find you will have more inspiration in the kitchen!
We run these sessions on a one to one or small group basis. You do the cutting and chopping. Learn how to tie a butchers knot and sharpen a knife.
Pork butchery – you will learn how to section a side of Pork. Where the cuts come from and their different uses. You decide how you want prepare this, as you take away a quarter pig in a box. Learn how to make sausages, make seasonings, how to prepare skins, how to knot them! Curing bacon and gammons – dry cure or wet cure? Half day including refreshment from £200 per person including a ¼ pig in a box.
Lamb butchery – you will learn how to butcher a whole Lamb. Where the cuts come from and their different uses. You decide how you want to prepare the cuts as you will take away a half lamb in a box. Learn how to prepare different Lamb joints, the classic Sunday roast leg of Lamb – sounds straight forward but there are over half a dozen different ways to prepare the joint. Fancy Lamb burgers or spicy Merguez sausages? We will teach you how to make seasonings and make these wonderful products. Half day including refreshment from £175 per person including a ½ lamb in a box.

We are passionate about meat. We are also very keen cooks and believe that the ability to debone or prepare cuts of meat enhances the skills of all cooks. The knowledge of the uses of different cuts and an appreciation of where the cuts are from also broadens the options on what is possible from a piece of meat.
